Hot and Sweet Chicken with Cilantro
(CATEGORY: Appetizer)

4 lbs bone-in chicken thighs, wings or drumsticks

1/4 cup olive oil

1 tsp salt

1 tsp freshly ground black pepper

1 tsp ground turmeric

1 tsp ground ginger

1 tsp ground cardamom

1 tsp ground cumin

1. In a large bowl, coat the chicken pieces with olive oil and sprinkle evenly with all the spices. Refrigerate for 2 hours or overnight.

2. Light a grill and heat to highest temperature. Place chicken pieces on hot grill. Close the lid and turn the grill down to the lowest temperature setting or roughly 350f- 375f. Slowly cook the chicken until done. An instant read thermometer should show around 165f internal temperature near the bone. Remove from heat.

3. In a clean bowl, toss the chicken with:

1/2 cup of Hot and Sweet Chili Sauce (available at your local Indian Grocer)

1 bunch chopped fresh cilantro

Garnish with cilantro sprigs and serve with lemon wedges.
